Datterino is a Roman-style cafeteria and Pinseria where Pinsa Romana is our signature. While our focus is on Pinsa, we created Datterino as an all-day Roman cafeteria — a place for breakfast, lunch, coffee, aperitivo and Pinsa (pizza) just like in Rome.

The name Pinsa comes from the Latin word “pinsere”, which means to stretch, to press, to spread by hand the traditional method used to shape the dough.

Modern Pinsa Romana is a contemporary interpretation of an ancient Roman recipe.
More than 2,000 years ago, rural communities outside the walls of Rome prepared a rustic flatbread using ground cereals such as:
• millet
• barley
• spelt
They mixed the flour with water, salt and wild herbs, creating a simple focaccia-style bread. Over time the recipe evolved with modern techniques and selected flours, while keeping its original Roman identity.

Our dough is made using a blend of selected grains (a blend of whole weat, rye, spelt, Barley just to name a few) and a long, slow fermentation. Although it is not sourdough, the process is very similar:
